Named after a town on the Ligurian coast, our Imperia pizza is a delicious celebration of Liguria’s most-famous export, basil. Beautifully simple, our artisan bakers hand-top each wood-fired sourdough base with creamy ‘bianco’ sauce, our own-recipe pesto, and hand-torn prosciutto cotto ham.

The standout ingredient here is our own-recipe Pesto — made with fresh basil from the coastal mountainsides of Liguria, aged Italian hard cheese, garlic and lemon juice — but as with any great pizza, everything starts with the dough.
Made from a ‘mother dough’ starter and slow-proved for 24 hours, our bakers wood-fire each pizza base at 400C on lava stone from Mount Etna. In the intense heat, the crusts rise, blister and char in authentic pizzeria fashion.

Wheat flour, garlic cream sauce 15% (aged hard cheese (cow's milk), cream, sunflower oil, maize starch, milk, roasted garlic 0.8%, lemon juice, salt, black pepper), water, mozzarella cheese 9% (cow's milk), basil pesto 7.8% (basil, sunflower oil, aged hard cheese (cow's milk), water, sugar, salt, corn starch, lemon juice, roasted garlic puree), prosciutto cotto ham 7.1% (pork meat, water, salt, dextrose, antioxidant : sodium ascorbate, preservative : sodium nitrite, spices and herbs), sunflower oil, salt, yeast, black pepper.
