On a sweltering summer’s day in Italy, ice-cold gelato is virtually medicinal. Tartufi (or “truffles” in inglese) are southern Italy’s best-loved gelato creation – delicate yet deeply rich ice cream truffles.
Nuts are used generously in Italian cuisine, and gelato is no exception. Under an enticing green pistachio crumb hides a layer of smooth nutty almond gelato. Reach the centre of this tartufo and you are rewarded with a core of delicious and silky pistachio gelato.
Many an Italian trattoria will have a glowing glass-fronted freezer in the corner of the room with shelves of sweet delights; Tartufi are a mainstay of these cabinets but are equally delicious under the warm Italian sunshine or in cooler climes.
