Italian gelato truffles
On a sweltering summer’s day in Italy, ice-cold gelato is virtually medicinal. Tartufi (“truffles” in inglese) are southern Italy’s best-loved gelato creation – delicate yet deeply rich ice cream truffles.
A classic flavour combination: silky hazelnut gelato – made with IGP hazelnuts – sits at the heart of this indulgent confection, encircled by a generous layer of smooth and rich dark chocolate gelato. Each tartufo is hand-rolled in a cocoa and hazelnut nib crumb, a final flourish and a welcome crunchy contrast to the creamy gelato centre.
Ingredients
Skimmed milk, cane sugar, fresh whole milk, low fat cocoa powder, coconut oil, fresh cream 5% (milk), hazelnuts 2.6%, dark chocolate flakes 1.5% (cocoa mass, sugar, cocoa butter, soy lecithin, natural vanilla extract), crushed hazelnut praline 1.4% (hazelnuts, sugar, glucose syrup), milk protein, glucose syrup, free range egg yolk, cocoa icing sugar (sugar, wheat starch, cocoa butter), mono- and -diglycerides of fatty acids, natural stabilisers (locust bean & guar seed gum, carrageenan), natural flavours.

Did you know?
Tartufi are said to have been first created in 1952 in the town of Pizzo, in Calabria by a pastry chef called Giuseppe de Maria, known as Don Pippo. The original Tartufo was made with layers of chocolate gelato and hazelnut gelato and dusted in cocoa powder.
